Smoked Salmon Cucumber Cracker

My favorite snack at the moment… Smoked salmon and cucumber cracker! This snack feels really sofishticated 😉 but it’s really super simple and easy to make. It makes a great appetizer but honestly I eat this as a meal because it’s DELICIOUS and I could eat a hundred. This recipe is gluten free because I used the crackers from Schar’s. They are nice and crispy which is exactly how I like my crackers.

Ingredients:
Gluten free crackers
Mascarpone
Cucumber
Smoked salmon
Black pepper
Fresh dill

Directions:

  1. Spread mascarpone onto Schar gluten-free crackers
  2. Add sliced cumber and smoked salmon
  3. Sprinkle ground black pepper and fresh dill.

Eating healthy isn’t always the easiest. Often the preparation can be time consuming and require multiple fresh ingredients. FALSE, not with an easy and simple sweet potato.

Sweet Potatoes are a great source of fiber, have cancer treating properties, rich in vitamins and are tasty as hell. EAT THE SKIN PEOPLE. The skin is full of nutrients that will keep you healthy and happy… also its also tasty as hell.

There are so many different ways that you can prepare this tasty treat. I bake mine in the oven for about an hour at 425 degrees. AN HOUR, YOU SAY? Yes! And that may sound like a long time, but you just pop it in the oven and then get ready for the day/ shower/ or do whatever miscellaneous activity! Then boom ready.

If I need the tater to cook faster, I will cook it on the stove. This way is actually more challenging for me because I have to be physically present while it cooks.

Both ways are DELISH.
