Deviled Eggs

Boil the eggs in hot water. I boiled mine for about 8 minutes to get a soft by firm yolk. After boiling, cut in half, scoop out the yolk in the middle and add into a bowl with mayonnaise, mustard seeds, red wine vinegar, salt, pepper and red pepper flakes to taste. Crush and blend then scoop back into the middle of the egg. Put in fridge and let chill.
READY TO EAT!
I like to top mine with smoked salmon. Don’t judge, Try it!

Ginger Carrot Soup

Cook carrots in a pan with olive oil and salt until tender. I like mine crispy on the outside. In a separate pan add cut ginger, garlic and onion, drizzle with olive oil and turmeric. Cook then add the diced apple while gradually adding vegetable broth. Be careful not to add too much or your soup will be liquidy! Cut and add the tender carrots, leaving one on the side to garnish at the end. Blend ingredients in order to get a creamy consistency! Then top with remaining carrot, sesame seeds, salt, pepper, and turmeric to taste.

Chicken and Waffles

Not your average breakfast! When you have leftover grilled chicken from the night before, this is a quick and yummy way to put them to good use. Just add chopped onions, a waffle, and precooked chicken to stove top. Cook, plate, and then top with syrup and honey! ENJOY

Strawberry Chocolate-Chip Cookie Cake

STRAWBERRY REDUCTION Cut strawberries, blend into liquid, then put into a pan. Add lemon zest then bring to a simmer on medium-high heat. Reduce the heat to low and allow to reduce for 15-20 minutes. Stir occasionally to prevent burning.
DRY MIX In a medium bowl sift together
1 1/2 cups of flour, 1 1/2 teaspoons baking powder
and 1/8 teaspoon salt.
WET MIX In a separate large bowl, combine 3 tablespoons of soft butter, 3 tablespoons of yogurt, and 1 cup sugar. Best on medium-high speed until light and fluffy. The mix in one egg and beat. Then mix in 1/2 cup of milk, 1 teaspoon of vanilla extract. COMBINE and blend dry flour mix. Add 1/2 cup of mini chocolate chips and blend (I use mini because they are my fav, but use your personal favorite). Then combine strawberry reduction. Add mixture into the pan. Top with chocolate chips and place halved strawberries on top. Bake for 375 for 35 minutes or until done. ENJOY

 

 

Chocolate-Chip Walnut Banana Bread

During covid, we all went through a banana bread phase. It was like a form of expression as we baked our emotions out into these loaves. I decided to shake up the normal recipe and add chocolate chip and walnut to the banana bread.

Ingredients:
Banana
Butter
Yogurt
Sugar
Eggs
Vanilla
Flour
Baking powder
Salt
Chocolate chips
Walnuts

Directions:

Mash 4 bananas then whisk in 6 tablespoons of melted butter, 1/3 cup of yogurt, 1 cup of sugar, 2 eggs and 2 teaspoons of vanilla until well combined.
In a different bowl, whisk the 2 cups of flour, 1 1/2 teaspoons of baking powder and a pinch of salt. After combined add flour mixture to the banana mixture and stir to combine. Then add mini chocolate chips and crushed coconut walnuts. After combined, put into pan and bake at 350 degrees for about 45 minutes, checking regularly until done.

Lobster Rolls

This bottom dweller will typically cost top dollar, but that didn’t always used to be the case.

Lobsters used to wash up in piles up to two feet high in the Massachusetts Bay Colony. Due to the hight quantity they became known as the poor mans meal. They were used as fertilizer and fish bait by Native Americans and colonists alike as well as were fed to slaves and prisoners. During the 1880’s, prices began to rise as lobster became more popular in areas like New York City and Boston until becoming a delicacy after WWII.

How to Make a Lobster Roll

In a large pot, add salted water and bring to a boil. Add live lobster to boiling salted water for 7-8 minutes per pound. We had 1/2 pound lobsters so ~ 3.5 – 4 minutes. Let it cool before extracting meat then remove the meat from cooked lobster (de-shelling can be difficult, I recommend watching video tutorials on YouTube. Gordon Ramsey’s “How to extract ALL lobster meat” is my favorite). Once the meat is extracted, cook it on stove top and in butter for about a minute. Then cut into pieces, add mayo, lemon juice, and finely diced arugula to taste. Butter the rolls before adding lobster mixture, then toast the buns on the stove with MORE BUTTER because butter makes this dish. Then serve and ENJOY.

A Few of My Trader Joe’s Favs

Trader Joe’s is one of my absolute favorite places. After moving to New York, it’s been harder for me to go to my haven. Here are a few Trader Joe’s products that I LOVE and are the reason that I make the journey.

Blueberry Lavender Almond Beverage – So good to drink by its self or as creamer in coffee! Yum! Such a lavender lover. 💜
The Best Fall Seasonal Item – Pumpkin Ravioli! So delicious and has the perfect pumpkin flavor.
A cart load of goodies! Some of my favorites being the sourdough bread and the French Brie cheese. LAWD. I picked these up every time. As much as I love sushi, wouldn’t recommend Trader Joe’s. Usually dry tasting.
Another cart full of goodies! Of course another French Brie cheese. The organic Toasted Coconut Granola is so good topped on smoothies or açaí bowl. Heck sometimes even just grab a handful to eat!

I am a big lover of tea, Earl Grey being one of my favorites!

Jalapeño Dreams

I LOVE spice. I’ve been eating a lot of jalapeños from nachos to burgers to pizza, which got me wondering about the health benefits of these spicy lil devils. Turns out they are low in calories and are full of important vitamins, minerals and antioxidants. They are also full of fiber. So if the spice doesn’t get you running to the bathroom, the fiber will. Jalapeños are also beneficial in losing weight by boosting your metabolism.

A Look into my Newly-Adopted Sushi Addiction

Sushi is healthy, OK. I reason with myself as I hesitantly spend more of my already tight budget on sushi for the 3rd time this week. Honestly, with no regrets (other than the faint whine that I hear coming from my bank account).

Within the past year my life has gone from “Yeah, I like California rolls” to “SUSHI? PLEASE. NIGIRI? MY FAV. ESCOLAR WALU, ALBACORE, YELLOWTAIL HAMACHI, SAKE SALMON, UNAGI” (which is squid and is so mf good). And unfortunately yes, I did just copy and paste my last Uber Eats receipt.

The reason being is still unknown to me. Have my tastebuds matured and this is what they beg for? They beg for rice and uncooked fish? YES. YES THEY SURPRISINGLY DO.

Sushi is low in calories and full of healthy omega-3 fatty. It can also be a great (and delicious) way to manage your weight. PLUS DID I MENTION THAT ITS FREAKIN DELICIOUS.
